We all know and love a caprese salad. Brings us back to the warm days of summer. Those three layers of flavor and Italian flag color combination Heirloom Tomato, Mozzarella and Fresh Basil… But at this time we are not bring anything new to the scene.
Now, let’s look at it from the Ambrogio point of view… We serve a caprese salad, and all our patrons love it. Why, because we use the finer ingredients we can find. Let’s look at those tomatoes who are not pretty enough to be on an ambrogio plate. They still deserve some caprese love, and that’s where Bobboi comes in.
Bobboi, the Gelato maker from La Jolla has been known, first of all for being the best gelato in San Diego. And it’s not us writing that because we collaborate with them, Yelp users have been raving about their special blend of Italian ice cream since they opened. They also have been known for using fruits that are a little on the strange looking side, helping with sustainability and reducing waste. This environmentally friendly effort has been gathering them a lot of press in San Diego.
So in this precise case, Bobboi takes those fresh heirloom tomatoes, mozzarella fior di latte (milk flower in Italian), fresh basil, a dash of Olive oil and peppercorns, and turn it into a Gelato.
What comes out of it is a velvety texture with multiple layers of flavor. Bobboi has been devoted to create gelato flavors that respect each ingredient the recipe calls for. The result being that creamy, savory and smooth gelato that will first hit you with the mozzarella taste, followed by the sweet tomato flavor and being finished by the fresh basil freshness.
“The first time I tried this gelato, I was surprised by the different layers of flavors and that they didn’t release at the same time. I had to take a second spoonful to analyze what I just experienced, and then a third but that is a different story.” says Luca Salvi, Co-Founder of Ambrogio.
